Beef Nacho Casserole
1 lb. Burke Beef Taco filling or ground beef
1 1/2 cups Cookies Premium Salsa (Mild or Medium)
1 - 10 oz. can whole kernel corn, drained
3/4 cup creamy salad dressing (Spin Blend)
1 tsp. Cookies Flavor Enhancer
2 cups crushed tortilla chips
2 cups Colby cheese
Preheat the oven to 350 degrees. Place taco filling or ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until warmed or evenly browned. Drain grease. Remove from the heat, and stir in the salsa, corn, salad dressing and Flavor Enhancer into the beef. In a 2-quart casserole dish, layer the ground beef mixture, tortilla chips and cheese twice, ending with cheese on top. Bake for 20 minutes uncovered in the preheated oven, until cheese is melted and dish is thoroughly heated.

Brown ground meat and onion. Drain of excess liquid. Add the rest of the ingredients without draining and simmer for at least 2 hours.
Serve with shredded cheese, sour cream and onions on the top.
Serves 6 to 8 people.

2 tsp. lime juice

1/2 c. Cookies Premium Salsa
1/2 c. sour cream
1 clove garlic, chopped
Melt margarine in a skillet. Sprinkle Flavor Enhancer on each side of turkey and cook in margarine for about 3 minutes. Remove and keep warm. In same skillet, stir salsa, soy sauce, lime juice and garlic. Heat to boil, stirring constantly. Remove from heat and stir in sour cream. Pour over turkey and top with green onions.

Spread Cookies Premium Salsa evenly over pizza shell, up to 1/2 inch of edge. Place beef, black beans and corn evenly over pizza surface. Sprinkle on cheese. Place in preheated 450 degree oven or pizza oven and bake 12 to 18 minutes or until crust is golden and cheese is bubbly and beginning to brown.

1 Tablespoon 2% or whole milk per egg
salt and pepper to taste
Mix eggs and milk and scramble on medium heat until eggs start to form. Remove from heat and add peppers, onion and return to heat. When eggs are formed, add salsa and cheese. Cook on medium until eggs are cooked to desired texture. Option: crisp bacon pieces or ground browned sausage maybe added at time of salsa for an extra kick.

Heat Cookies Premium Salsa in a skillet or microwave oven until warm. Heat meatballs in microwave oven until warm (do not overheat). Place 4 oz. of cheese into the bottom of an oven-safe serving dish. Add meatballs, Salsa and top with remaining cheese. Place in preheated 350 degree conventional or pizza oven and bake 30 minutes or until cheese is bubbly, but not browned. Heat tortillas on flat top grill or cover in toweling and heat in microwave oven. Serve warm tortillas on the side.
